Cold smoking enthusiasts assure us that this method provides wonderful flavour and nutritional properties that are not available in any other way. Such effects can be achieved to the AluCink cold smoking attachment ZW01 . In this process, the smoke circulates only slightly around the meat. It is cold smoked in a low smoke temperature of up to 24C. The duration of such a process is several hours for sausages and several days for hams. It is worth waiting, however, because you will end up with a longlasting product that can be stored for several months.All work must be carried out with breaks, the generator must be started as described in the recipe, but usually for 2 hours in the morning and 2 hours in the evening. The maximum temperature for heating the generator is 40 C. The ZW01 accessory reduces this temperature according to the needs of cold smoking. This element is fixed to the generator and then connected to the chamber with a spiro tube. The length of the smoke diffuser cable should be within 1.22 metres. The installation of the whole structure is quick and easy, stable and clean during use.
