The perfect complement to the basic Borniak 70 smokehouse kit is the enriched ZS70 accessory kit, which includes a number of important items in addition to the standard smokehouse cabinet, smoke generator and the usual number of shelves and hooks. This allows for convenient preparation of meat and fish over a wide temperature spectrum, depending on the recipe. When cold, it is smoked at low temperatures of up to 24C. Such effects can be achieved to the AluCink ZW01 cold smoking attachment. In this process, the smoke circulates only slightly around the meat. The duration of such smoking is several hours for sausages and several days for hams. It is worth waiting, however, because in the end you will get a very refined taste and longlasting products that can be stored for several months. The smoke generator heating can heat the appliance up to 40C. The fixation allows the temperature to be reduced to cold smoking conditions, resulting in a chamber temperature only 2 degrees er than the atmospheric temperature.
